2 stalks of celery, chopped 1 tablespoon vegetable or oil of choice 1 onion, finely chopped 1 clove garlic, minced 1 large bell pepper, chopped 1 large carrot, shredded 2 tablespoons fresh parsley, chopped Cayenne pepper Salt Granulated garlic and dry thyme 6 chicken breasts, boned and skinned |
Directions
Vegie Chicken
Preheat oven to 375 F. In a large skillet heat the oil until moderately hot; add onion, garlic, celery, carrot, bell pepper, and while cooking until tender, add salt and cayenne pepper. Remove skillet from heat and let cool to room temperature. Cut pockets in chicken breast and stuff with spicy vegetable blend. Place stuffed chicken breast in a greased baking dish, season with salt, granulated garlic, thyme. Bake for 35 to 45 minutes. |
