Caribbean Chicken Chicken Leg Quarters (or breast if you prefer) I like leg quarters because they are more moist. You can also use all legs or all thighs. Dry Marinade - Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tb Onion flakes 1 tb Onion powder 2 ts Ground thyme 2 ts Salt 1 t Ground Jamaican allspice 1/4 ts Ground nutmeg 1/4 ts Ground cinnamon 2 ts Sugar 1 t Coarse ground black pepper 1 t Cayenne pepper 2 ts Dried chives or green onions Mix together all the ingredients. Store leftovers in a tightly closed glass jar. |

Caribbean Chicken Season with - Spicy Caribbean dry marinade. Bake in oven until light brown. Remove from oven and pour Caribbean sauce over each piece and return to oven until chicken is done. Caribbean sauce - Worcestershire sauce, fresh jalapenos, or habanero, fresh garlic, ground allspice. You can also substitute the jalapanos with Chili Pepper Paste for added flavor. Fried bananas are fantastic with this dish. Mama says it compliments the spices in the chicken! Melt 2 tablespoons butter in frying pan (on low heat) Peel one banana and cut into long strips. Place in pan and raise heat to medium high. When the banana starts to brown add a dash of granulated sugar. This helps to carmelize the banana without over cooking it. Place banana strips over each piece of finished chicken and serve. |
