| Sweet Potato Soup |

Ingredients
4 large sweet potatoes
2 cups 1% low-fat milk or soy milk 1-teaspoon cardamom powder ½ teaspoon ground cinnamon Pinch of nutmeg (Makes 4 to 6 servings) 4 large sweet potatoes

Directions
Bake or boil sweet potatoes until easily pierced with a fork.
When potatoes are cool enough to handle cut each in half, scoop them out of the skins and transfer to a bowl. Mash well. Combine the mashed sweet potatoes in a soup pot or large sauce pan with the remaining ingredients. Stir together, and then heat slowly until the mixture comes to a simmer. Cover and simmer gently for 5 minutes, serve at once. |
