Ingredients
1 and 1/4 cup yellow or white corn meal
1/2 cup finely chopped onion 1/4 cup all-purpose flour 3/4 teaspoon salt 1/2 teaspoon baking soda 1/4 teaspoon ground back pepper 1/8 tsp cayenne pepper (optional) 3/4 cup evaporated milk 1 large egg, lightly beaten 1 tablespoon lemon juice Vegetable oil 1

Directions
Combine corn meal , onion, flour, salt, baking soda, black pepper, and cayenne in medium mixing bowl.
Combine evaporated milk, egg, and lemon Juice in a small mixing bowl; add to corn meal mixture. Mix until blended. Add vegetable oil to 2-in depth in a large skillet and heat to 350ºF. Drop batter by rounded tablespoon into hot oil; turn to brown evenly. Cook, turning frequently, for about 3 minutes or until golden brown. Remove with slotted spoon, drain and serve. C
