Cornbread Mix Ingredients:
4 and 1/2 cups cornmeal 4 cups all-purpose flour 3/4 cup sugar 1/4 cup baking powder 1 cup vegetable shortening 1 tablespoon salt |
Directions
In a large bowl, combine flour, salt, sugar, and baking powder. Stir to blend well. With a pastry blender, cut in shortening until evenly distributed. Add cornmeal and mix well. Put in a large airtight container. Store in a cool, dry place. Use within 10 - 12 weeks. Makes about 10 and 1/12 cups or cornmeal mix. Cornbread Muffin Directions: Preheat over to 425º F. Butter muffin pans. Put cornbread mix in a medium bowl. Combine egg and milk in a small bowl. Add all at once to cornmeal mix. Blend. Fill prepared muffin pans 2/4 full. Bake 15 - 20 minutes, until golden brown. |
