Ingredients
1 lb dried red beans 2 large onions, chopped 2 stalks celery, chopped 1 medium-size green pepper, chopped 1 clove garlic, minced 2 teaspoon salt 1/2 teaspoon pepper 1/4 cup chopped parlsey Hot cooked rice 2 lbs smoked sausage |
Directions
Sort and wash beans. Combine red beans, onions, celery, green pepper, and garlic in a Dutch oven, cover with water, and bring to a boil. Reduce heat, cover and simmer 2 to 2 1/2 hours or until beans are tender and thick gravy is formed. If necessary add more water to prevent beans from sticking. Stir in salt, pepper, and parsley. Cook sausage until done cut into serving peices. Mound rice in the middle or serving plates. Spoon beans around rice, and place sausage on plate with beans. Yield 8 to 10 servings |
