Frog Legs

Directions:
Only the hind legs of frogs are eaten. They are skinned and thrown for five minutes, into boiling water in which you have put salt and a few slices of lemon. Then remove and put into cold water for a minute; wipe perfectly dry. Rub salt and pepper onto them, dip in egg batter, and fry in deep, boiling lard. Garnish with parsley, sliced lemon and radishes.
