Easy Southern Cooking Class Recipes

Marmalade Sweet Potatoes

(Makes 8 servings)


5 large sweet potatoes (about 2 ½ lbs.), cooked
1 /2cup packed brown sugar
1/4 cup butter or margarine, melted
1/4 to 1/3-cup brandy
1/2 teaspoon salt
1/2 teaspoon ground ginger
1-teaspoon vanilla
1 Tablespoon butter or margarine, melted
3 Tablespoons orange marmalade
1 Tablespoon grated orange rind


Peel and mash sweet potatoes.

Stir in sugar and next six ingredients.

Spoon into a greased 11x7x1 ½ inch-baking dish.

Brush with 1 Tablespoon of melted butter.

Top with orange marmalade and grated orange rind.

Bake at 350? for 25 to 30 minutes.

*To cook fresh sweet potatoes or yams (whole).  Cook in boiling water to cover for about 45 minutes or until tender.
