Ingredients Fresh 3 lb pork roast 1 onion, sliced 1 bell pepper, sliced 4 stalks celery, sliced 10 cloves garlic, sliced 2 tomatoes, cut in pieces 4 cups chicken broth 1 Tbsp thyme |
Directions Trim fat, etc. Cut pork into bite size pieces, season meat with salt & pepper and dust lightly with flour. Lightly brown in Dutch oven with 1/4 cup oil, add more when needed. Top with vegetables and add broth.
Simmer covered on low heat until fork tender or bake covered in oven at 375 for approx 1 hour or until done. 3 lb pork roast
